When I first started dating my husband, we had an odd obsession with finding recipes to cook. The original recipe I found was extremely tasty and quick. Unfortunately, that was almost 10 years ago before it occurred to me to print out the recipe for a recipe binder. Over the years, I’ve at least been able to remember the ingredients and have added things over the year. Once even making it more into a soup which was more interesting than anything. This meal is filling, rather inexpensive and makes a lot of leftovers which is why I appreciate it.
Cheesy Chicken Broccoli Crockpot Recipe
1 Can Cheddar Cheese Soup
1 Can Cream of Chicken
3 cups Chicken Broth
4 Chicken Breasts (Frozen or Thawed)
1/4 Sour Cream
2 cups Shredded Cheddar Cheese (save 1/2 cup for topping your dish)
1 Bag of Frozen Broccoli
Thyme 1 tsp
Parsley 1 tsp
Salt
Pepper
2 cups uncooked rice
Step 1. Add the cheddar cheese soup, cream of chicken soup, and chicken broth in the crockpot and whisk together.
Step 2 Add chicken breast to the crock pot. Put the lid on and cook High for 3-4 hours or on Low 6-8 hours.
Step 3. Remove chicken breast and shred. Place back in the crockpot and stir in the sour cream.
Step 4. Stir in the 1 1/2 cups shredded cheese, Frozen Broccoli, and season to taste. Cover the lid and let it cook for another 30 minutes.
Step 5. Cook the 2 cups rice per their cooking instructions.
Step 6. Plate your chicken dish over rice and top with shredded cheese.
